Corn Bread
2 Boxes of Jiffy Corn Muffin Mix
4 Eggs
16 oz. Sour Cream
2 Sticks Butter, Melted
1 can Cream Style Corn
Preheat oven to 350 or 400
Spray a 9 x 13 pan
Bake for 55 min
Or until golden brown

Yes, you read it right, you start with 2 box's of Jiffy corn muffin mix
Enough butter to clog your arteries.
I will tell you that this is moist and delicious and warrants

Jiffy is my favorite corn bread mix! I never thought about adding anything to it. This sounds so yummy, Roxy! It would have gone well with the pot of Chili I made earlier this week. :)

ReplyDeleteThe Jiffy Mix factory is not far from here, and we had a fun homeschooling outing years ago visiting their plant. Such fun to see conveyor belts with hundreds of little Jiffy boxes going by. Their corn muffin mix is their best-seller. Perfect for the cool fall weather, served with chili. The creamed corn would make a delicious addition.

ReplyDeleteDear Roxy, I know this recipe sounds tasty, but I'm concerned because cardio-vascular disease is the #1 cause of death for women, not to mention our nation's problem with obesity and type 2 diabetes. As a retired professor of nutrition, I'm writing this with all kindness and helpfulness to encourage you and others to live healthy lives. Here's a friendly tip: If you want to use your recipe, you can substitute fat free sour cream, Egg Beaters instead of eggs, and cold pressed olive oil for the butter. Olive oil is a healing, anti-inflammatory monounsaturated fat, and is so healthy. A healthy alternative is to use self-rising corn meal mix, use skim or fat free milk, (we use almond milk), and the amount of olive oil called for on the recipe on the corn meal mix package. Omit the eggs. Surprise! No one will know the difference, but they will be eating healthy! God bless you & thanks for allowing me to add a healthy tip, Bev
ReplyDeleteCorn bread is very American so it isn't something we make here very much, in fact I don't think I have ever made it. However my eldest son made some and brought it around for me to try and it was very nice. I might have to give your recipe a go!!
